Available from Brett Evans of Red Hawk Farm, we have chemical free, Fairytale Eggplants on the list for next week! Fairytale eggplants are a mini, purple eggplant variety. They are just a few inches in length, and tend to have a sweeter flavor and thinner skin than a full sized eggplant. They do not need to be peeled, and cook great on the grill where the skins insulate the flesh for a smooth, creamy, smoky result!
