Okra Corn Tomatoes

Corn | Okra | Tomatoes, Slicing |
Ingredients:
2 or 3 large tomatoes, chopped
1/2 lb of okra with tops cut off and sliced into 1" pieces
3 cobs of corn with kernels cut off of the cob
minced garlic
salt
cayenne
olive oil

Method:
Heat olive oil in a sauce pan and add sliced okra. Sautee okra until it is not "slimy" anymore, adding small amounts of water or broth as necessary. Okra is not "slimy" when it drops off of a spoon one by one instead of in a clump. Add minced garlic, tomatoes, salt, and a pinch (or more of cayenne). Simmer on low until tomatoes have broken apart. Add corn and simmer until corn is cooked. Serve alone or with rice. Boiled shrimp can also be added when corn is added.
