Peaches |
Ingredients:
4 cups peach puree (about 6 to 8 freestone peaches)
1 tbsp lime juice (from about 1/2 fresh lime)
1 cup sugar
1/2 tsp vanilla extract
1/8 tsp salt

1 qt heavy whipping cream
1 qt skim milk

Method:
Wash and pit peaches, and cut them into large pieces. Puree the peaches with lime juice in blender. Add sugar, vanilla and salt to puree in blender and mix. Transfer the puree/sugar mix to a covered container, and chill 1 to 2 hr in refrigerator. Combine chilled puree with remaining ingredients in 6-qt ice cream freezer. Freeze according to freezer instructions (about 20 min for an electric motor driven freezer.) The milk / cream / puree mixture should fill the freezer can only half-way before freezing -- air mixed in during freezing will result in a full can after freezing.
