Ingredients: 2 Tbsp Olive Oil
1 Large Onion, thinly sliced
5 tsp Curry Powder
1/4 tsp Cayenne Pepper
3 14-oz cans Vegetable or Chicken Broth
1 Large Bunch Swiss Chard, chopped
1 15oz can Garbanzo Beans, drained
1 lb Red Lentils (about 2 1/4 cups)
Plain Yogurt
Method: Heat oil in a large saucepan over med-high heat. Add onion, saute until golden. Mix in curry and cayenne. Add broth and chard. Increase heat to bring to a boil. Add lentils and garbanzos, reduce heat to medium. Cover; simmer until lentils are tender, stirring twice, about 10 minutes. Divide among bowls, top with yogurt.
