Braised Greens with Beets and Mung Beans
1/2 bunch Rainbow Chard, chop leaves and stems
1/2 bunch Collards, chop and de-stem
1/2 cup frozen cooked Mung beans
4 Beets roasted cubed
1/2 cup chopped Cilantro
1/3 cup Olive Oil
1 tsp. Paprika
1 chopped Red Onion
3 chopped Garlic cloves
1/4 cup Water
Salt and Pepper to taste
Combine ingredients well in a pot
Cover and cook on low heat for 45 minutes
stir every 15 minutes
Brown rice
prep time: 15 minutes
cook time: 45 minutes
