Fried green tomatoes over spinach with garlic ranch and bacon

This was something I came up with using what I had on hand and it was a good experiment! This is for two portions. (Vegetarians can leave out the bacon, of course.)

To fry tomatoes:

2 green tomatoes
2 c cornmeal
Egg wash made from 1 egg and about 2/3 c milk

Slice tomatoes. Dunk in egg wash, coat with cornmeal. Fry in hot oil until crisped and brown. Drain on brown paper bags or paper towels.

To assemble salad:

4 c spinach leaves
fried green tomatoes
about 1 c homemade garlic ranch dressing (see previous post)- or good quality storebought ranch
bacon to taste (I made about 8 slices and crumbled them)

Put spinach on plates, followed by slightly cooled tomatoes. Pour ranch dressing over. Add bacon. Enjoy.

This would work fine with blue cheese dressing, too, and next time I'll probably add a chopped hard boiled egg.
