Onions | Chard | Potatoes |
2 medium onions
1 bunch Swiss Chard
2 cooked, peeled medium potatoes (I microwave them)
8oz smoked cheddar or other smoked cheese
1/4 cup sour cream
Wholewheat pastry for 9" shell
Smoked Paprika
Salt, Pepper, Oil, Butter

Preheat oven to 375. Finely chop the onion and saute in butter/oil until starting to brown. Remove the bottom third of the chard stems and roughly chop the rest. Add to the onion until wilted. Season with salt, pepper, and about 1/2 tsp smoked paprika. Add the sour cream and most of the cheese, Pile the mixture into the wholewheat pie shell, sprinkle with the rest of the cheese and bake for 30 minutes.
