Cucumber Kimchi


A flavorful, unfermented variation of the classic Korean dish, featuring sliced cucumbers, brined, then tossed with onions, fresh ginger and garlic, basil, lime zest, and red chile flakes in a sesame oil dressing spiked with nuoc mam fish sauce. Try it on a sandwich or salad. It also makes a cool summer side dish!
