We have organic okra back on the list from Down 2 Earth Farm for next week. Beautiful, mixed red and green okra, just mix in a little bacon and some cooked field peas for a delicious and beautiful southern style side dish!

Okra is as southern as kudzu and sweet tea! A member of the hibiscus family, okra thrives in the scorching heat of humid summers and probably originated from Africa. If you think you don't like cooked okra, you probably haven't tried it fried! While boiling or stewing brings out certain gumminess, dry heat and quick cooking results in a crunchy texture like green beans.
