Grass-fed Skirt and Flank Steaks


Available from V. Mac Baldwin of Baldwin Beef, we are happy to have a nice new supply of grass-fed, local Flank and Skirt Steaks coming in for next week! Most of us have tried flank and skirt steaks at some point, but they are cuts we often pick up at the store, so it's a nice treat for us to have a good supply of this very flavorful beef cut available to us next week, humanely-raised on pasture right here in NC.

Skirt and Flank steaks are great cuts for marinating. They can be a little tough on their own, but after marinating for an hour or so, the meat becomes much more tender, and combines really nicely with the strong beef flavor that you get from these cuts. The following marinade is an easy way to get started. The flank/skirt steak can be grilled or just cooked on the stove-top, and eaten as is, or cut up to be used as a delicious and flavorful meat in enchiladas, burritos, tacos, etc!

Cilantro/Lime Marinated Skirt/Flank Steak

Skirt or Flank Steak
1/2 cup cilantro, chopped (1/2 cup)
juice from 2 limes
1 clove garlic, minced
1 Tbsp. olive oil
