Japanese Eggplant
We have beautiful Japanese and Neon eggplant on the order page this week! Japanese eggplant is long, thin, and
dark purple in color. It is even more versatile than conventional globe eggplant because it has a thinner skin
and is practically seedless. The flavor tends to be milder and less bitter than other varieties. Neon eggplant
has a tear-drop shape with pink-purple neon skin. The tender white flesh is smooth and creamy. Known for their tender,
absorbent flesh, Japanese and Neon eggplant work well in a number of dishes including tempura, ratatouille, moussaka,
pizzas, pastas and the classic eggplant parmesan!
