Red & Green Bi-color Mustard Greens

page this week! Mustard Greens are wonderfully peppery or bitter, but have a delicate texture. It is precisely their peppery,
bitter taste that makes them so good! Cooking, whether a slow simmer or quick sauté, is the first step in taming greens like
Mustard Greens. They also benefit greatly from three simple additions: salt, fat and spice. Salt (soy sauce, anchovies, bacon!)
takes the edge off the bitterness, while fat ( butter, olive oil!) softens the taste. Mustard Greens can be braised or sauteed,
but they also pair beautifully with pasta like orrechiete or fettucine. Garnishing the finished pasta dish with grated romano
and pine nuts makes the perfect springtime dinner!
