A delicious spring dish featuring local scallions, local arugula, and locally made focaccia bread. A dish that takes fresh scallions out of the realm of garnish, char-roasting them beautifully in the oven. The scallions are combined with a fresh arugula salad in a lemon vinaigrette, topped with a fried egg, and served with crusty focaccia bread from La Farm Bakery. A super simple, but delicious seasonal meal!
